Chocolate Buttermilk Cake

Although any chocolate cake will do for the Black Forest Trifle, this chocolate buttermilk cake is fabulous!

Ingredients
1 cup flour 250 mL
1 tsp baking soda 5 mL
¼ tsp salt 1 mL
½  cup butter, room temperature 125 mL
1 ¼ cups packed brown sugar 300 mL
1 ½  squares unsweetened chocolate, melted 42 g
2 eggs 2
3/4 cup buttermilk 175 mL
1 tsp vanilla 5 mL
     


Directions
In small bowl, stir together flour, baking soda and salt. Set aside. In large bowl, cream together butter and brown sugar until blended. Add melted chocolate. Blend until smooth. Add eggs. Beat well. Add flour mixture alternately with buttermilk to creamed mixture, beginning and ending with flour mixture. Add vanilla. Beat well. Pour batter into greased 8x8-inch (20x20 cm) cake pan. Bake at 375° (190°C) 35 – 40 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.
