Linguine with Shrimp & Peas in Creamy
Tomato Sauce
Very quick, very Italian. This dish is
equally suitable for a family dinner or for company.

garlic, chopped |

medium cooked shrimp |
125 g |
|
1 cup |
peas, fresh or frozen |
250 mL |

¼ cup |
chopped fresh basil |
50 mL |

whipping cream |
250 mL |

salt |

pepper |
2 mL |

¼ cup |
grated Parmesan cheese |
50 mL |

| Directions |
|
Cook the linguine according to package
directions, drain and set aside in a serving dish. Melt the
butter in a saucepan over medium heat. Add the onion, garlic
and tomatoes and cook for 2 minutes. Add the shrimp, peas and
basil, stir and cook for 2 to 3 minutes more. Add the cream,
bring to a boil and let simmer until slightly thickened. Pour
the sauce over the linguine, and sprinkle with the salt,
pepper and Parmesan. |
