Christine's Fabulous Rice Pudding

Ingredients
3 cups milk 750 mL
1 cup whipping cream* 250 mL
1/2 cup short grain rice (Arborio or Italian Style) 125 mL
1/4 cup packed brown sugar 50 mL
1/2 tsp cinnamon 2 mL
1/4 tsp salt 1 mL
1/4 cup raisins (optional) 50 mL
1 Tbsp vanilla 30 mL


Directions

In heavy saucepan, bring milk, whipping cream, rice, sugar, cinnamon and salt to a boil over medium heat, stirring often. Reduce heat to low; cover and simmer, stirring occasionally for 20 minutes. Stir in raisins (if using). Cover and simmer, stirring occasionally, for 5 minutes longer or until rice is very tender. Stir in vanilla. Serve warm or cold.

* Evaporated milk may be substituted.
