Healthy Dessert Cream

Make this dessert a day ahead in individual dessert bowls or glasses. This light dessert is perfect after a big meal and also makes a great breakfast.

Ingredients
½  cup instant oatmeal 125 mL
1 cup milk 250 mL
1 ½  cups plain yogurt 375 mL
6 Tbsp maple syrup or maple liqueur 90 mL
2 red apples, washed, with peel 2
2 cups fresh berries or other fruit* 500 mL
2 fresh pears, washed, with peel 2
¼ cup chopped almonds 50 mL
cinnamon, ground


Directions
Soak oatmeal 15 minutes in warm milk. Blend in yogurt and maple syrup. Grate apples and pears and add to mixture. Add berries (or other fruit) and almonds. Pour mixture into glass serving dishes. Chill for at least 1-2 hours or up to a day ahead. Decorate with your choice of fresh berries, mandarin oranges, chopped almonds, mint leaves or a dash of cinnamon.

*Instead of fresh berries use canned mandarin oranges 4 tins (10 oz/284 mL) or other fresh or canned fruit.

Other options:

· If using vanilla yogurt instead of plain, decrease maple syrup to 2 Tbsp (25 mL).

· Use 1 can (398 mL/14 oz) of pears instead of fresh.
