Pina Colada Pops

Yield
10 (3oz/100mL) pops


Ingredients
1/2 cup crushed pineapple (undrained) 125 mL
1/2 cup coconut milk 125 mL
1 cup whipping cream 250 mL
1 1/2 cups pineapple juice 375 mL
3 Tbsp light rum or vodka (optional) 45 mL


 
Place ingredients in blender. Blend until smooth. Pour into popsicle molds or small (3 oz/100 mL) paper cups. If using paper cups, freeze until partially frozen, then insert a wooden stick into the center of each. Freeze until firm. To serve, peel off paper cup or run popsicle mold under warm water to loosen.
