Strawberry Mousse

strawberries (cut in half, reserve 4 for garnish) |

orange liqueur or orange juice |

Mousse: |
|
|
|
1 envelope |
unflavoured gelatin |
7 g |

1/4 cup |
cold water |
50 mL |

4 cups |
strawberries, quartered |
1 L |

1/2 cup |
strawberry jam |
125 mL |
|
2 Tbsp |
orange liqueur |
30 mL |

2 cups |
whipping cream |
500 mL |

| Directions |
Base: Toss the halved strawberries
with sugar and orange liqueur. Set aside.
Mousse: Sprinkle gelatin over cold water in a small
saucepan and set aside for 5 minutes or until softened. Heat
gently for 30 to 60 seconds or until just melted. Puree the
quartered strawberries with jam and liqueur. Blend in
dissolved gelatin. Whip the whipping cream until light. Fold
gently into the pureed berries. To assemble, spoon the base in
the bottoms of 8 wine or parfait glasses or dessert bowls.
Spoon mousse mixture over tops. Garnish each serving with half
of a whole strawberry. Chill until ready to serve. |
