Strawberry Mousse

Ingredients
Base:
2 cups strawberries (cut in half, reserve 4 for garnish) 500mL
2 Tbsp sugar 30 mL
1 Tbsp orange liqueur or orange juice 15 mL
Mousse:
1 envelope unflavoured gelatin 7 g
1/4 cup cold water 50 mL
4 cups strawberries, quartered 1 L
1/2 cup strawberry jam 125 mL
2 Tbsp orange liqueur 30 mL
2 cups whipping cream 500 mL


Directions
Base: Toss the halved strawberries with sugar and orange liqueur. Set aside.

Mousse: Sprinkle gelatin over cold water in a small saucepan and set aside for 5 minutes or until softened. Heat gently for 30 to 60 seconds or until just melted. Puree the quartered strawberries with jam and liqueur. Blend in dissolved gelatin. Whip the whipping cream until light. Fold gently into the pureed berries. To assemble, spoon the base in the bottoms of 8 wine or parfait glasses or dessert bowls. Spoon mousse mixture over tops. Garnish each serving with half of a whole strawberry. Chill until ready to serve.
