Cheesy Breakfast Strata

Ingredients
8 cups crustless white bread cubes (½  in / 1 cm) 2 L
12 oz Canadian Brie cheese, cubes 375 g
8 oz Canadian cheddar cheese, grated 227 g
1 green onion, chopped 1
1 clove garlic, minced 1
6 eggs 6
3 cups milk or cream 750 mL
2 Tbsp dry mustard 30 mL
2 tsp paprika 10 mL
½  tsp salt 2 mL
¼ tsp freshly ground pepper 1 mL
¼ cup chopped fresh parsley 50 mL


Directions
Place half the bread cubes in lightly greased 9” by 13” (22x33 cm) baking dish. Top with half the Brie, half the cheddar, and all the onion and garlic. In a large bowl beat together remaining ingredients. Pour half the egg mixture over onion, cheese, and bread layers. Top with remaining bread cubes, cheeses and egg mixture. Cover. Refrigerate at least 4 hours overnight. Uncover. Bake at 350°F (180°C) 45-60 minutes or until puffed and golden. Let stand 10 minutes before serving.
